BAKED PARMESAN CRUSTED SALMON

YIELD: 2 SERVINGS
 PREP TIME: 10 MIN
 COOK TIME: 15 MIN

INGREDIENTS YOU NEED
  • 2 (5 – 6 oz) salmon fillets
  • 1/3 cup melted butter
  • 1 cup panko breadcrumbs
  • 2/3 cup grated parmesan cheese
  • 3 tablespoons minced parsley
  • Salt and fresh cracked pepper
  • 2 cloves garlic minced
  • 1 tablespoon olive oil, optional
  • Lemon wedges, for garnish

DIRECTIONS
  • Preheat your oven to 400 degrees. Mix the bread crumbs, parmesan cheese, parsley, garlic, salt, and pepper together in a shallow plate. Melt butter and transfer in another shallow plate.
  • Dip both sides of the salmon fillet in the butter mixture – coating it well.
  • Transfer the salmon fillets on the breadcrumb mixture and toss the crumbs up over the edges and top of salmon. Gently press the salmon on all sides over the crumbs so it sticks well.
  • Arrange salmon fillets in a baking dish and drizzle with a dash of olive oil. Bake in the preheated oven for 10-13 minutes, depending on the size of your salmon fillets. Serve with a green salad and garnish with lemon wedges. Enjoy!
