Roasted Heart Potatoes

I like roasted potatoes but they take so long to make. I started to par-cook them before roasting them in the oven. Par-cooking really helps, it cuts on the roasting time significantly and it also produces the crispiest potatoes. They are easy to prepare any day of the week. They are so much better than fries, in my opinion.

You can also make cubes and only only few heart ones, one or 2 hearts will add a little flare to your dinner plate too, doesn’t have to be the whole bunch of hearts. Little love goes a long way.

Roasted Heart Potatoes

6 large potatoes (about 2 pounds for 4 servings)

INGREDIENTS
  • 1/4 cup olive oil
  • 1 to 2 tsp kosher salt
  • freshly ground pepper
  • 2 tsp caraway seeds
  • 1/2 tsp paprika optional
